Ingredients:
Cherry stuffing:
1 kg cherries (frozen or fresh)
2 tablespoons corn flour
1 tablespoon lemon juice
100 g sugar
2 tablespoons corn flour
1 tablespoon lemon juice
100 g sugar
Dough:
3 eggs
150 g sugar
3 teaspoons of milk
300 g flour
Crumbles:
200 g butter
75 g sugar
100 g flour
Directions
Put the cherries in a pot. Toss them with lemon juice and water and add all the needed ingredients except of the corn flour. Heat the mixture and bring it to a simmer. Take some of the liquid, mix it with the corn flour and add it to the cherries. Bring it so a simmer again until the mixture gets viscous. Remove and leave it to cool down.
Dough:
In a small bowl, combine the eggs, sugar, flour and milk; set aside in the fridge.
Crumbles:
Mix the ingredients with a blender until crumbles arise. Take care not to stir too long since the crumbles will stick together.
Preparation:
Grease the cake tin and space it out with the dough as shown in the picture.
Fill in the cherry stuffing and cover it with the crumbles.
Bake at 375° for 30-35 minutes until crust is golden brown and filling is bubbly. Cool on a wire rack. Best served with whipped vanilla cream.
